Eggplant or Aubergine Omelette

This recipe uses the technique of boiling the eggplant or aubergine instead of grilling it. It's  healthy, easy to make and suits the vegetarians. You can also drizzle some lemon juice on top to add a zing to the flavour. My daughter loves this recipe so if you want to let your children eat healthy vegetables, I recommend this. :)
